My Everyday Spinach Salad


I think we all have our staple meals, the ones we rely on day after day. Sometimes it's just easier, and other times it's just comforting. I definitely have mine! My breakfast each morning is generally my peanut butter power bowl, overnight oats, or warm oatmeal with chia seeds, fruit, and nuts. I'm a little more adventurous on the weekends, usually preparing a large plate of veggies & eggs!

I also lean on comfort and convenience for my week day lunch. I make a salad that is extremely nutrient dense, but also delicious {I wouldn't eat anything but!}. It has so many different elements I never get tired of it. Spinach, avocado, hard boiled egg, red pepper, sunflower seeds - just to name a few of the toppings. It's extremely nourishing and loaded with super foods!

I always make my own salad dressings too! This one is simply olive oil and white balsamic vinegar - lightly drizzled and seasoned with a little sea salt & pepper. It's perfection, if we're being honest!

There are two things I love when eating this salad; number one, the way the avocado and feta cheese break down with the olive oil and vinegar and form a delicious dressing all on their own, and number two, the savory crunch of the toasted sunflower seeds. Gets me every time!

{side note} I love how Sawyer sits patiently in the bouncer while I assemble my greens. Training him young! And is it just me, or does it look like he's playing the harmonica? Haha!

  • 2 cups organic baby spinach
  • 5 yellow cherry tomatoes, halved
  • 1 green onion, chopped
  • 1/4 red pepper, sliced
  • 1 radish, sliced
  • 1/4 cup chopped cucumber
  • 1/4 avocado, sliced
  • 1 hard boiled egg, quartered
  • 1/4 cup feta cheese
  • 1 tsp raw sunflower seeds, toasted
  • 1 tbsp extra virgin olive oil
  • 2 tsp white balsamic vinegar
  • salt & pepper to taste


  1. Toss the veggies, cheese, egg, and toasted sesame seeds in a bowl. Drizzle with olive oil and balsamic vinegar. Finish with salt & pepper to taste.
