Apple Walnut Spinach Salad with Creamy Dijon Dressing {vegan}

Another day, another salad. But actually, this isn't just another's a sweet and savory salad with crisp apple, tart cherries, earthy quinoa, red onion, and crunchy walnuts atop of bed of fresh spinach, all smothered in a creamy dijon dressing. I mean, just look at it...

I inhaled this so fast. It has all the textures and flavors you crave in a salad. And that creamy dijon dressing just completes it...

Anyone who knows me, knows that I just adoooore all the products by So Delicious. My fridge and pantry are always stocked with their dairy free coconut milks and creamers, and I've just recently tried their cultured coconut milks, too. I cannot believe how much they resemble a standard yogurt, but less any dairy - so perfect for those who are lactose intolerant or following a vegan diet! This dressing is the perfect creaminess using their plain cultured coconut milk. And the best part for all you amateur chefs?! It's only THREE ingredients! You really can't mess it up, and that tangy dijon all over those fresh greens and crisp apples is really something special. Yum yums.
