No Bake Energy Bites

Hellooooo weekend and good morning Everyone! Saturday's are just the best! On a scale from 1-10, I'm about a 9 on the mood scale this morning. That's pretty high. I think it's because there are FORTY degree temperatures on the horizon. With the weather Michigan has been having, that will nearly feel like swimwear temps...nearly.

These little no bake energy bites taste like a chocolate chip peanut butter cookie. Most of my sweeter recipes have those ingredients - do we see a trend here? They are packed full of oats, honey, chia & flax seeds, and toasted coconut. I make them almost monthly and will indulge in one or two for dessert {or a sweet snack}. My sweet tooth saviors!

I found the recipe from Gimme Some Oven, and put some of my own personal touches on them. These little bites are extremely dense {and addicting} so be careful not to pop too many at once!


No Bake Energy Bites

Ingredients

  • 1 cup oats

  • 1/2 cup mini chocolate chips (use dairy free chocolate chips to make vegan!)

  • 2/3 cup organic unsweetened coconut flakes, toasted

  • 1/2 cup natural creamy peanut butter or sunbutter

  • 1/3 cup pure agave

  • 1/4 cup ground flax meal

  • 1 tbsp whole flax seed

  • 1 tbsp chia seeds

  • 1 tsp vanilla extract

  • pinch of salt (optional)

Instructions

  1. Toast coconut until golden brown in a fry pan over medium heat and set aside to cool (no oil needed)

  2. Mix all ingredients together in a large bowl and chill in fridge for at least 30 minutes

  3. Remove from fridge and roll mixture into balls, about 1 inch diameter (makes about 15-20)

  4. Store in airtight container in fridge for up to a week
