Peanut Butter Cup Overnight Oats

Confession: Sometimes I eat chocolate for breakfast.

If you've been following me, you know I have an oatmeal addiction...and a peanut butter addiction...and I eat chocolate almost daily...so this should really come as no surprise, these here oats.

Overnight oats. Another addiction. Because really, what's better than waking up and having your breakfast all prepped and ready to go (especially if there is chocolate in it)? The only requirement is to stir and add your favorite toppings, and that takes all of 45 seconds.

If you're a breakfast skipper, "No time" is an invalid excuse if you make overnight oats. Just saying. :)

Peanut Butter Cup Overnight Oats

Ingredients

  • 1/2 cup oats

  • 1/2 cup coconut milk (I used So Delicious)

  • 1 tbsp natural peanut butter

  • 1 tsp unsweetened cocoa powder

  • 1 tsp coconut palm sugar

  • 1 tsp chia seeds

  • Optional Toppings: chocolate chips, additional peanut butter, additional milk, fruit, nuts

Directions

  1. Mix together oats, coconut milk, peanut butter, chia seeds, cocoa powder, and palm sugar in a bowl.

  2. Cover with saran wrap and let chill overnight in the fridge

  3. Stir in the morning and add desired toppings
